Cooking Competition Information

Everyone you know makes the best chili ever, just ask them! At the Hanover Chili Cook Off, Judges evaluate two different versions of ICS competition chili, red and green, and homemade salsa to determine which Cooks will qualify as the Pennsylvania State Champion at the ICS World Championship Chili Cook Off in Manchester, NH.

Pennsylvania residents also cook-up chili for the hotly contested PA KEYSTONE CUP OPEN CHILI Competition.

You can reward Chili Cooks by voting for their chili with your ticket stub for the “People’s Choice” award or with a cash donation for the “Good Samaritan” award.

OPEN Chili – The PA Keystone Cup Chili Competition: Aroma, consistency and taste are the three primary components for this chili competition. Just about anything can be called chili, but a blend of meat with beans, vegetables or pasta is what the judges will be expecting. Chili must have beans, pasta or other ingredients to distinguish the entry from ICS Red Chili.

This competition is open to PA RESIDENTS ONLY!

ICS RED CHILI: Traditional RED CHILI is defined by ICS as any kind of meat or combination of meats, cooked with red chili peppers, other spices and other ingredients with the exception of beans and pasta which are strictly forbidden. Winning recipes from years past are available on the ICS web site. Judging will be based on the following six criteria:

GOOD FLAVOR This is the most important factor. The taste should be consistant with the combination of the meat, peppers and spices. A perfect blend of these flavors with no particular ingredient being dominant.

TEXTURE of the meat not too tough or not too mushy.

CONSISTENCY Not too thick or not too thin with a good ratio of sauce to meat.

BLEND OF THE SPICES and how well they have permeated the meat.

AROMA The chili should have a pleasing smell, usually a personal preference.

COLOR A rich reddish-brown is generally accepted as good.

ICS CHILI VERDE: CHILI VERDE is defined by ICS as any kind of meat or combination of meats, cooked with green chili peppers, various other spices and other ingredients with the exception of beans and pasta which are strictly forbidden. Judging is the same as above. Winning recipes from years past are available on the ICS web site.

ICS SALSA: What ever you call salsa is salsa. There are no strict rules, vegetables, fresh herbs, fruits or whatever the cook feels will taste good is allowed in this competition.
